2 cups of chopped watermelon
1 1/2 cups water
handful of basil leaves
juice of 2 lemons
1/2 cup sugar
To make your basil simple syrup, chop the basil leaves and add them to the sugar and 1/2 cup of water in a saucepan. Cook over medium heat for 5 minutes or until the sugar is dissolved. Remove from heat and leave cool for 10 minutes. Strain, discard basil leaves and refrigerate for 1 hour.
In a blender, puree the watermelon and 1 cup of water. Strain and discard the seeds and solids.
Pour watermelon mixture in a jug, add the basil simple syrup and lemon juice and mix well.
Serve over ice with garnish (basil leaves/ slice of lemon/ small watermelon slice)
Turn it into sangria with some white wine.
Turn it into a cocktail with vodka.
