chocolate coconut cake.

 I can't say that my 2016 so far has been all salads and smoothies to be honest. I have been a little healthier since Christmas but there's been a lot of quick pizza dinners and skipping breakfasts. So this cake wasn't a reward or major treat, just a bitta midweek baking. 

1 1/2 cups plain flour
1 1/4 cups brown sugar
1 cup desiccated coconut
1/2 tsp baking soda
5 tbsp cocoa powder
2 eggs
1 cup oil
1 cup milk
2 tsp lemon juice
2 tsp vanilla essence
pinch of salt

Preheat the oven to 180 degrees. Grease a cake tin. Mix flour, coconut, baking soda, salt and cocoa. Beat eggs and vanilla in a separate bowl. Add milk, sugar, lemon juice and oil to the eggs and mix well. add dry ingredients bit by bit until mixed thoroughly. Pour into cake tin and bake for 30-40 minutes or until skewer comes out clean when inserted into the centre. Leave to cool for 10 minutes. Place on a wire tray and leave cool completely. Sprinkle icing sugar over the cake and try not to eat the whole goddamn thing in one day!

  2. Quite easy to cook, but the result is amazing. However, I had to add some dark melted chocolate into the pastry as it wasn't rich enough for me.

  3. I found this hoping it would be like a cake that a long-lost coworker used to make.. and it is!! So delicious! Will be making this for our next luncheon at work.
