This week we've been all about the comfort food at home. Between Nancy being sick and the weather still being quite bitter, we've done lots of baking and eating. These cookies have to be my favourite. Peanut butter with anything is my favourite to be honest.
peanut butter & dark chocolate cookies:
1 cup of peanut butter
1 1/2 cups of plain flour
1 teaspoon baking powder
1 cup of light brown sugar
1 large egg
1/2 cup of dark chocolate chips
110g of Kerrygold butter
Sift the flour and baking powder together in a bowl and set aside.
Mix the peanut butter, brown sugar and butter together and beat in the egg. Add in the flour mixture.
Roll into small balls of dough (about 2 tablespoons) and place on a lined baking tray about 3cm apart. Use a fork to press down on each ball in a criss cross pattern.
Bake in an oven at 180 degrees for 18 minutes or until golden.
Remove from oven and place on wire tray to cool.
Serve with cold milk or a dark chilli hot chocolate.
