my last rolo brownies.

 When I was thinking of something to make Louis for a Valentine's treat, the phrase "my last rolo" popped into my head. (If your sickened now by the mushiness, I'm sorry. I can say though that this recipe is not as sickening!) Brownies are always a good way to go so I was a little disappointed when I saw that the roll brownies already existed. Nonetheless, here's my take on the rolo brownie recipe.

My last rolo brownies:
(Makes 6)
100g butter
100g plain cooking chocolate
125g muscovado sugar
2 eggs
1 tbsp of dark cocoa 
75g plain flour
1/2 tsp of sea salt
2 packets of Rolos

  1. Heat the oven to 170°C. Grease and line a small cake tin. Melt the 100g butter and the cooking chocolate together in a saucepan and stir over a low heat. Allow to cool slightly.
  2. In a mixing bowl, beat together the sugar and eggs, then stir in the cooled melted chocolate to combine. Sift in the flour and cocoa, then fold and lastly add the sea salt.
  3. Mix the Rolos into the batter, then pour into the prepared tin. Bake for 25-30 minutes until firm on the outside but slightly gooey and soft in the middle. Leave to cool fully in the tin, then remove and slice it up.
