salad or smoothie - aubergine, tomato and parmesan salad.

This week I haven't been as healthy as I planned on Monday morning. My intentions are always good on a Monday but by Thursday or Friday I'll cave, get fish and chips for dinner and by Sunday the biscuit tin is always empty! So, this week's salad leans a little more towards the end of the week but it's not so bad really.

aubergine, tomato and parmesan salad:
aubergine, a few cherry tomatoes, a handful of spinach, spring onions, parmesan cheese and natural yogurt.
Sauté bite sized pieces of aubergine for 3-4 minutes, arrange the other ingredients on a plate, sprinkle with parmesan cheese and top with a spoon of natural yogurt.
