salad or smoothie - avocado and walnut salad.

Today I made a salad for lunch using what I already had in the fridge and spotted a lonely pack of walnuts in the cupboard also. I was sitting down at the laptop again with my lunch in less than five minutes. Next time I would roast the walnuts for a few minutes first but it still tasted great for a 5 minute salad!

Avocado and walnut salad: 
1 avocado peeled and sliced, a few cherry tomatoes, spinach leaves, a handful of walnuts, drizzle of lemon, salt and pepper seasoning.
